Summer slaw

Sometimes the traditional coleslaw with Mayonaise is just too heavy. This alternative is perfect for packed lunches, with BBQ’s and roasted veg 

ingredients

  • Half a red OR GREEN cabbage, sliced very finely 

  • 1 large carrot, peeled and grated  
    1 large apple grated (any eating variety will do) 

  • 2 spring onions finely chopped 

  • 2 tbsp Mountain Produce Cold Pressed Sunflower Oil 

  • 1 tbsp Maple Syrup

  • Juice of 1 lime

  • Salt and Pepper 

HOW TO MAKE....

  • Mix the cabbage, spring onion, cabbage and apple in a bowl.

  • In a separate bowl mix together Cold Pressed Oil, Maple Syrup and Lime Juice until well combined.

  • Mix the dressing and vegetables together well and season with salt and pepper.

  • Set aside for at least 20 minutes before serving.
