carrot salad
This is a favourite in our house and goes with most things. Once made it'll last a couple of days in the fridge in a sealed container
ingredients

2 apples cored, grated or very finely sliced

2 carrots peeled, grated or very finely sliced (If you have a mandoline or a food processor this really speeds the process up)

3 tablespoons of Mountain Produce sunflower oil

3 tablespoons lemon juice
-
2 tablespoons of sultanas or raisins

2 tablespoons of nuts or seeds ( toasted if you have time). We have used peanuts, walnuts, hazlenuts, pumpkin seeds and sunflower seeds in the past, they all work well.
HOW TO MAKE....

Mix everything together with some sea salt and freshly ground black pepper.​
